So I thought that probably at least a few of us still have copious amount of leftovers in the refrigerator. So I wanted to share a couple of recipes that I came up with to make my left overs new. Actually, they're not recipes, as much as procedures. And if either of these resemble anything you have seen on Food Network, it's purely coincidental
First, Baked turkey and ham sandwich Take a can of crescent rolls (any type, reduced fat is fine) and lay it out flat. Pinch all the perforations back together and use your rolling pin to smooth it out (or the inside of your paper towel holder...That used to be my only rolling pin!) Lay slices of turkey/ham/both down the middle longways. Cover with whatever shredded cheese you have on hand. Fold both sides over the middle and pinch to seal all the seams. Then brush with beaten egg, bake at about 400 degrees until it's nice and golden pretty. Serve it with stuffing...you could even put the stuffing inside YUM! Second is Shepherds Pie (9x9 inch pan) Brown a pound of ground beef. Add a can of cream of mushroom soup (again, reduced fat generic brand is fine) and Worcestershire sauce to taste. Put the meat mixture in the bottom of your 9x9 pan. Layer whatever veggies you have on hand: green beans, or green bean casserole. Corn. Squash. Peas. Really, whatever veggies. Then spoon your left over mashed potatoes on top and smooth. Throw some shredded cheddar on top and bake until you have nice brown bubbly cheese on top. What do you do with your leftovers? |

You had leftovers? We just ate like pigs for 2.5 days and there were no leftovers. Of course it helped that there was also NO WHOLE TURKEY......but I am getting over that. Really.
That first one sounds good, actually they both sounded good but then I like food in general so when you're talking 'good home cooking' its even better the next day! |

Oh and I thought of something else, on the Shepherd's pie...if you didn't have mashed potatoes, but had augratin or scalloped potatoes, those would be good on top too!

I'm jealous. We don't have any leftovers since we had dinner with family out of town. Oh well, maybe one year!
