I should have posted this here, but I'm looking for healthy alternatives to traditional recipes (I originally posted this on the health & wellness board).

Okay, I'll share a few healthy ones from my South Beach Diet Recipe Sampler book.

Crustless Cheesy Quiche

2 cups cholesterol-free egg product
4 Frozen BOCA Meatless Breakfast links, cut into 1/2 inch thick slices
6 fresh asparagus spears, trimmed, cut into 1/2 inch lengths
1/2 cup Low Fat Cottage Cheese
1/2 cup shredded reduced fat mild cheddar cheese
1/4 cup finely chopped onion
1 Tbsp. Grey Poupon Dijon mustard

Preheat oven to 350. Spray 9 inch pie plate with cooking spray.

Mix all ingredients until well blended. Pour into prepared pie plate.

Bake 40 - 45 min. until center is puffy and top is golden brown.

Serves 6

Nutrition info: 150 calories, 6g total fat, 2 g saturated fat, 10 mg cholesterol, 460 mg sodium, 5 g carbohydrate, 1 g dietary fiber, 18 g protein.

Peanut Dip

2 C. chopped unsalted roasted peanuts
1/2 C fat free plain yogurt
1/4 tsp. finely grated lemon peel
Salt

In a blender or food processor, combine peanuts, yogurt, lemon peel, and salt to taste, and process until smooth. We always add a little more yogurt and lemon to suit our taste).

This is a great dip for fruits and veggies!

Mini Spinach & Cheese Cups

These are just DELICIOUS! My hubby and kids can't stop eating them!

1 pkg frozen chopped spinach, cooked and well drained.
1/2 C. 2% shreddd reduced fat mozzerella cheese
1/3 C Light Cream cheese spread
1 Tbsp. Grated Parmesan
1 Tbsp. finely chopped onion
1/4 tsp. garlic powder
24 slices Oscar Mayer Deli Style Shaved Oven Roasted Turkey Breast

Preheat oven to 350 F. Mix all ingredients except turkey until well blended.

Flatten turkey slices; place 1 slice in each of 24 minitaure muffin pan cups. Fill each with 1 1/2 tsp. of the spinach mixture.

Bake 15 minutes or until heated through. Serve Warm.

Italian Spinach Pie

1 container (16 oz.) Low fat cottage Cheese
1 pkg (10 oz) frozen chopped spinach, thawed, well drained.
1 C. 2% shredded Mozzerella Cheese
4 eggs, beaten
1 jar (7 oz) roasted red peppers, well drained, chopped.
1/3 C. grated parmesan cheese
1 tsp. Dried Oregano Leaves

Preheat oven to 350. Mix all ingredients until well blended.

Pour into greased 9 inch pie plate

Bake 40 min. or until center is set.

Serves 8

Great Substitute: Sub 1/2 C. chopped red bell pepper for roasted red pepper.

My kids LOVE this dish.

Low Fat Quick Creamy Alfredo Sauce

1 C Evaporated Skim milk
1/4 C Liquid Butter Buds
1/4 C. flour
4 tsp fat free chicken broth or bouillon
1/4 C fat free Parmesan cheese
1/4 tsp minced garlic (in a jar)
1/4 tsp ground pepper
1/4 tsp lite salt (optional)

In small saucepan over low heat, blend flour, liquid Butter buds, skim milk, and chicken broth. Add minced garlic, salt, and pepper. Continue to cook over low heat until the sauce thickens. Stir in Parmesan cheese and serve immediately. Serve with cooked fettuccine (10 -12 ounces, cooked). Serves 6.

You can add chicken to this dish also. Try boiling 3-4 chicken breasts with 1/4 chopped onion and black pepper. Drain, discard the onion and chop the chicken into small pieces. Place the noodles, the chicken, and then the sauce in a casserole dish.
