What is everyone having for dinner? I am a bit bored and curious. Wink

We are having homemade Hispanic yellow rice with fresh cilantro, empanadas with chicken filling (I think that is what I will use) and frijoles con Lizano.

WOW! That sounds yummy! We are having chicken enchiladas...nothing fancy though...just the Old El Paso kit....I know what you mean...I have been so bored with dinner lately!! Maybe we should all have a recipe swap or something Smiler

Okay that sounds really good!!!! Even the El PAso brand...I always use El Paso! We are having nothing fancy...steak and gravy over wild rice with fresh green beans.

The chicken cutlets sound good...what flavor is the marinade? Is it store bought or homemade?


What I made is really easy to do, less than 30 mins and dinner is on the table. I learned how to make it all from my hubby, who is hispanic. Latin America has such yummy flavorful food! Smiler

My best friend in college was from Cuba...I LOVED it when his mom would come and visit!! Everything she made was so good....I grew up eating super flavorful food and still love it....growing up I though all meats were made with teriyaki and garlic..haha
My brothers are Puerto Rican too and there relatives (long story) have the best BBQs ever!

myspirit -- its a homemade marinade. Ive got to do whatever possible to keep that food budget down! its pretty simple; a little sweet baby ray's BBQ sauce, a little apple juice, a bit of worchestershire, and some spices.

I went on a huge cooking marathon for weeks, and did it like I tend to do most things, which is WAY OVERBOARD. Now, we're out of room for leftovers....so all week, leftovers. Chicken cacciatore, anyone?
