We made these the other night, and the whole family ate them up! Thought I'd pass it along:

Take a pita and cut it in half so the insides are facing up on a baking dish. Sprinkle olive oil and broil for 2 minutes. Take them out and top with whatever pizza toppings you want (we did sauce, spinach, artichokes and mozzarella cheese). Put back in and broil until the cheese melts (about 2-3 minutes).

Voila!

I got home at 6, and by 7 everyone was fed, bathed and the kitchen was cleaned up. Talk about a great night!

Last weekend we had company and we grilled a bunch of chicken breast. We had tons left over and have been eating it on top of salads all week for dinner..that is a very good way to have a good /easy and quick weeknight meal!
