I've tried crock pot meals and have no luck with them. The food always comes out soggy and mushy -- gross! Does anyone have any casserole-type dishes or salads that can be made the night before, then heated up or taken out of the fridge the next night? Recipes, please? I do this with chicken and rice and manicotti, but I can only make that so many nights a week.

Here is my special/awesome curry chicken salad recipe. You can make a big batch and it only gets better and better as it sits in the fridge for a few days. You can put it on top of salad...so good and hearty. Also, it is great in a wrap!

To make enough to last for a few days:
4 whole skinless/boneless chicken breasts
3/4 cup of raisons
1 cup celery chopped
1/2 cup green onion chopped
1/2 cup orange juice
2 whole pears (firm-not too ripe) chopped
curry powder to taste
salt to taste
cyanne pepper to taste
low fat mayo
2 tble olive oil
2 cloves garlic


coat chicken w/ olive oil and garlic (you can squeeze the garlic in a garlic press, or buy the stuff already chopped) cover w/ foil and bake at 350 until no longer pink let cool and then chop into small bite sized pieces.

Mix everything else together w/ the chicken once it is cool and chopped up! I add quite a bit of curry..you may want more/less..same for everything else..just add what you want..you may LOVE raisons and want two cups---no biggie. You can also add chopped nuts. I have not done this yet, but am planning my next batch..yummy!!!!

Well I don't know if this will work for you but it does for us. I take flour tortillas, shredded chedder cheese, 1 can of refried beans, salsa, sour cream. Well I take the tortilla and spend some refried beans on it. Add chedder cheese, fold in half. Bake on 375 just long enough to melt cheese. Then I cut them in triangles and dip them into salsa or sour cream. You can also ad vegetables like mushrooms or black olives to them or even left over chicken. My daughter loves them, they are great finger food

Also breaded frozen chicken breast from the freezer, bagged green salad. Heat the chicken breast, about 15 mintutes. Then cut up into strips and place on top of salads. Wow! You have fried chicken salads. They are good and fast.
