You guys, I have to feed my co-workers for breakfast. We take a turn each week, which means that every week we have breakfast together, which is great. I'm up next week, and I am already stressing since I'm not a cook. Any one have any suggestions for any inexpensive breakfast dishes?

What about Quiche? It can be made teh night befoe and brought in cold, or warmed up at work. It sounds fancy and is EASY! I have included two of my faves below. Serve it w/ a few loaves of sliced crusty bread. You can also go on the foodnetwork.com and check out breakfast ideas.

Spinach & Bacon Quiche
6 large eggs, beaten
1 1/2 cups heavy cream
Salt and pepper
2 cups chopped fresh baby spinach, packed
1 pound bacon, cooked and crumbled
1 1/2 cups shredded Swiss cheese
1 (9-inch) refrigerated pie crust, fitted to a 9-inch glass pie plate
Preheat the oven to 375 degrees F.
Combine the eggs, cream, salt, and pepper in a food processor or blender. Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top. Bake for 35 to 45 minutes until the egg mixture is set. Cut into 8 wedges


Mixed Veggie Quiche
1 (9-inch) refrigerated pie crust
1 (10-ounce) package frozen chopped spinach, thawed and drained
1 cup cooked stir-fried vegetables
1 cup part-skim ricotta cheese
3/4 cup grated Cheddar
1/4 cup low fat milk
2 eggs, lightly beaten
2 teaspoons Dijon mustard
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon grated Parmesan
Preheat oven to 375 degrees F.
Press pie crust into the bottom and up the sides of a 9-inch, removable-bottom tart pan (or 9-inch pie pan). Set aside.
In a large bowl, combine spinach, stir-fried vegetables and place on top of uncooked crust. In another bowl combine ricotta, cheddar, milk, eggs, Dijon, oregano, salt, and black pepper. Mix well. Spoon cheese mixture on top of vegetable mixture in prepared pie crust and top with Parmesan.
Bake 20 minutes, until a knife inserted near the center comes out clean and crust is golden brown.

Ok so one of my favorites is a Mexican Quiche or Casserole if you must. I don't have the exact recipe and never have. It always turns out though.

Depending on the number of people you may want to make two dishes.

Sausage (I usually use the Jimmy Dean in the tube, Original or Spicy)
Eggs 6
Chedder Cheese 2 cups
Salsa, one large jar or two small ones

Line the baking dishes with cooked(browned)sausage, then layer with salsa. Beat eggs and add salt and pepper to taste. Then top with chedder cheese. I like to have hot sauce and sour cream available to top it. Also, chives go well on top. It's a different twist to breakfast. I forgot to add bake it at 375 or until the eggs are set/firm.

I usually make a breakfast casserole whenever I need something for work, church etc. and I have yet to ever have any leftover to bring home. Smiler It is nice because you mix it up the night before, let it sit in the fridge overnight and then cook in the morning.

8 oz. cheese
6 eggs
1/2 lb. bacon (cooked)
4-6 pieces of bread
2 c. milk
salt and pepper

Grease bottom of your 9 x 11 pan. Cut each bread slice into four squares and lay in a single layer across bottom of greased pan. Add cooked bacon and then cheese on top of the bread. Mix eggs with milk in a separate bowl and add a little salt and pepper. Pour egg mixture evenly over bread, bacon and cheese. Cover and refrigerate over night.
In the morning:
Bake at 350 for 45-60 min. (try 45 first and keep adding 5 min. until top of casserole is lightly browned).

Depending on how many people you are trying to feed, I usually make two casseroles. On a further note, I just prefer bacon. You could put sausage or other ingredients. If you wanted a vegetarian one you could just put like green peppers or onions or other vegetables.

ok, you guys don't know Suzy that well yet!!!

Here ya go sister!

In the frozen food sections, buy a couple of bags of Pillsbury Frozen Sandwich style bisquits, i think there are 10 to a pack. Bake them as directed, takes about 15 minutes. Place in gallon zip lock baggies.

In the can food isle, buy Campbells Sausage Gravy. Usually 1 can to three or four bisquits depending on how heavy you like your bisquits soaked!

Heat up said can in microwave until bubbly. Put in Glad disposable dish.

Serve on paperplates with paper forks.

Throw away all evidence!

Does a dozen bagels from Panera count? That's usually my go-to breakfast, mainly because I'm not that good of a cook.
