I *LOVE* delicious, rich meals, but I am always searching for ways to add vegetables and cut down on fat when cooking for my family.

One of my favorite tips... I add tons of sliced veggies (carrots, zucchini, peppers, onions and occasionally peas) when cooking spaghetti sauce/lasagna.

Another one a friend shared with me ages ago... take a box of chocolate cake mix, and instead of adding the oil/eggs, simply add 1 can of pumpkin and bake. It's awesome!! And much lighter.

What are your favorite healthy recipes/tricks?

Oh, I love little healthy tricks....
My main meat of choice is chicken. I will "fry" up a piece of chicken using Italian Olive oil dressing....about 50% less calories than using traditional olive oil.

Instead of salad dressing I use salsa. Only 20 cals for 2 tbls.

I eat a lot of parmasean (sp) cheese on veggies to add taste since I do not use butter or famous southern bacon seasonings.

As far as your cake trick....I also use applesauce instead of oil.
